Using the Whole Pumpkin – Roasting the Seeds

Pumpkin seeds can reduce your LDL levels and increase your serotonin – harvesting some seeds is a perfect excuse to carve yourself a jack-o’-lantern!

Carving Jack-o’-lanterns is a fun way to get into the Halloween spirit… And there’s the added benefit of being leftover with a big bowl of pumpkin guts! If you were never sure what to do with all that mess before, below is a classic method of enjoying your pumpkin seeds. Try different spices for variety like this sweet & spicy version.

Directions

  1. Clean the seeds. After digging out the guts of a medium pumpkin, separate and wash the seeds. This step can take a while but take it as a meditative task. 😉
  2. Boil the seeds (this step is optional). Boiling the seeds can make them more crunchy and aid in digestion. Bring to boil over medium heat in water with a pinch of salt. Drain and pat dry.
  3. Season seeds. Toss in ghee or coconut oil and sprinkle with Pink Salt.
  4. Roast. Set oven to 325F and bake for 10 minutes
