Satsifying Summer Salads!

There’s nothing better than a salad in the warm weather: fresh crisp vegetables, in-season fruits, perhaps some hearty nuts, nourishing fats or wholesome grains to round out your meal. Here’s one of our favorite light and simple summer salads, using Premier Research Lab’s EFA oil and Pink Salt:

Fresh basil leaves
Cherry or grape tomatoes, cut in half
Diced red onion
Heart of palm
Sweet bell pepper
Crumbled feta cheese

Dressing: (for one serving)
2 tablespoons Premier EFA oil
2 teaspoons fresh-squeezed lemon juice
1 medium garlic clove, minced
A pinch of Premier Pink Salt, to taste
Optional: dried oregano and/or black pepper, to taste

Whisk together dressing ingredients, and pour over salad. Toss thoroughly and enjoy, preferably in the sunshine with good friends or a good book! Try serving it with this easy instant tomato soup to round out your meal.
