I really wanted to make Matzoh Ball Soup for a Passover Sedar Dinner Potluck but having never had tried a traditional matzoh soup and knowing that matzoh is basically white flour and water, I wasn't sure that I could pull this off. After reading tons and tons of recipes, I figured real matzoh, being white flour, wouldn't be healthy, so I decided on Hol Grain Crackers. There are whole wheat matzoh on the market but I decided to make them from rice crackers.
Last year, I found this wonderful cheese alternative product called Daiya, made primarily from tapioca and arrowroot flours and pea protein. Available in 'Cheddar Style' and 'Italian Blend', it melts and stretches just like the 'real' thing!
After stalking the company for a few months, it was finally available...
I use this pancake mix for a base in gluten free baking, but almost never use it on its own. A few days ago, I decided to experiment by adding some protein powder to balance out the carbs, even with the extra egg that I add to the instructions on the package. The cakes turned out nice and fluffy (as opposed to chewy when used alone)!
This serious allergen free pancake&waffle mix makes a great base, not only for a variety of different pancakes but for other baking needs as well. The package has a recipe for coffee cake but I imagine you can use it for any other cake recipe as well!
