...what's in your Milk

You really need to think about milk.

Why are we the only mammal that drinks milk through adulthood, let alone, another animal's milk? Naturally, milk is weaned off once a baby can chew and digest foods --- same with any other animal. Cow's milk should only be consumed by calves.

Ok, so it's cultural. Many many cultures have thrived on milk, cheese, cream, butter - and still do. I can't say I know much about the dairy industry in Europe or Down Under but I have done my share of research about the inhumane ways that cows are raised in order to produce milk in the U.S. and subsequently, the adverse reactions associated with milk consumption.

Naturally, a single cow wouldn't even produce milk year round, much less, 10-20 times what it needs to produce for her calf. Thus, our dairy industry pumps them with hormones (you've heard of BGH - Bovine Growth Hormone - right?) into the poor animals and sucks milk from them with heavy duty equipment that causes sores on their udders. Then, they are given antibiotics so they don't get an infection. Let's pretend that antibiotics are safe. Shouldn't these cows also be given time to rest so they heal? Nope. So their udders stay infected, and like any wound, they produce pus. Ever wonder why you get a runny nose every time you have dairy? Yup. Mucus. Tons and tons of it. And we all know they eat grass, like cows are supposed to right? Guess again. They are given the same pesticide ridden, GMO corn and grain-based food people get.

Milk = A cocktail of hormones + pesticides + pus + ground water contaminants.

Please do yourself a favor and do away with it. If you must drink it, buy organic of course but reports show even organic milk has contaminants. Make sure your organic milk isn't from the same farms as commercial milk here. If you can find raw, get raw and make kefir. Check out this site to find Real Milk.

    Making nut milk is a lot easier than you might have imagined. With just a tiny bit of planning (remembering to soak them), you'll end up with fresh creamy nut milk.  Even if you don't soak your nuts overnight, it is totally achievable, though your cashew milk might be a bit grittier.

    This recipe is for cashew milk but you can substitute it with any other but. Keep in mind that other nut milks, to have the consistency of milk, may have to be strained in a nut milk bag or cheesecloth to remove the grit.

    You may not want to add the honey and vanilla if you want to use the milk for something savory, like a creamy pesto or curry.

    This recipe will yield about 32 oz of nut milk and keep for about 3-5 days in the fridge. Cut recipe in half if you want fresher nut milk.

    Ingredients

    • 1 cup organic cashews, soaked overnight
    • 24 oz water
    • 2 tsp vanilla extract (optional)
    • 2 tbsp honey (optional)

    Instructions

    1. Blend all together.
    2. Enjoy!

    I had a bit of cashew milk leftover last Sunday that I wanted to use up.  I poked around my freezer for some frozen fruit and found just enough pineapple pieces. It was the perfect cool-down drink post-hike for us. 

    Then today, my mom gave me the sweetest, perfectly ripe pineapple so I was tempted to make this again. Luckily, I made a fresh batch of cashew milk yesterday so we were able to enjoy the treat again! Be creative and add mangoes or berries to jazz up a nut-milk based smoothie!

    Ingredients

    • 8 oz Cashew Milk or other Nut Milk
    • 1 cup pineapple piece, fresh or frozen
    • 5 06 ice cubes if using fresh pineapples

    Directions

    1. Combine all ingredients in a blender and process till smooth.

    This is such an easy raw breakfast! Use any combination of nuts/seed you have at home. If you're using sweetened nut milk, omit the honey. Make sure that you don't over process the nuts or they will become more like nut-butter. This sweet and crunchy bowl of goodness is tastier and way healthier than cereal!

    • 1 large apple, diced (or if you're using a food processor, use your grater blade!)
    • 1/2 cup Raw nuts and/or seeds, chopped or coarsely processed.
    • Ground cinnamon (to taste)
    • 1 tsp raw honey (optional)          
    • 1/2 cup Homemade or store bought unsweetened nut milk or rice milk

    Coarsely grind (pulse) the nuts and seeds in a food processor or blender. Combine apple and nuts and seeds in a medium bowl. Add cinnamon and honey.  Mix well. Spoon into bowls and add milk.
