Daiya Cheese

Last year, I found this wonderful cheese alternative product called Daiya, made primarily from tapioca and arrowroot flours and pea protein. Available in 'Cheddar Style' and 'Italian Blend', it melts and stretches just like the 'real' thing!

After stalking the company for a few months, it was finally available for retail purchase at Whole Foods, but in an unattractive, bulk plastic package, stocked under the prepared pizza counter.  On the more refreshing side, I started noticing pizza parlors using this melting vegan goodness on their pies.

Then, this past week, I stumbled upon their booth at Expo West, and they are proud to finally have packaged the shredded 'cheez' like you'd see any other shredded mozzarella or cheddar. It will be available at Whole Foods in 2 weeks - April of this year. And the packaging is cute! Hip Hip Hooray!

From their website: Daiya is made entirely from plant-based ingredients.

The full list of ingredients are as follows:
Purified water, tapioca and/or arrowroot flours, non-GMO expeller pressed canola and/or non-GMO expeller pressed safflower oil, coconut oil, pea protein, salt, inactive yeast, vegetable glycerin, natural flavors (derived from plants), xanthan gum, sunflower lecithin, vegan enzymes (no animal rennet or animal enzymes), vegan bacterial cultures, citric acid (for flavor), annatto.
  • Shredded Mixed
  • Italian Blend
  • Cheddar Style
  • Until April, bulk packaged Daiya available under the prepared pizza area @ Whole Foods

  • This serious allergen free pancake&waffle mix makes a great base, not only for a variety of different pancakes but for other baking needs as well.  The package has a recipe for coffee cake but I imagine you can use it for any other cake recipe as well!

    Ingredients: Sweet Brown Rice Flour, Tapioca Flour, Arrowroot Flour, Rice Milk Powder, Cream of Tartar, Xanthan Gum, Baking Soda, Sea Salt, Ground Vanilla Bean.

    The sweet brown rice makes the pancakes chewier than fluffy but I don't mind that.  Judging from the color of the dry mix, there is a lot more tapioca and arrowroot flour than brown rice flour and make the pancakes taste more refined than a whole-grain pancake would taste.

    Try adding more brown rice flour, buckwheat flour, coconut flour, sweet potatoes or anything else you can think of to add flavor and/or texture!

    Ants

    Supplies: ¼ cup confectioners sugar + 1 tablespoon Borax OR Peppermint essential oil or citronella essential oil
    Instructions: Sprinkle in kitchen and bathrooms, but away from kids and pets / use a few drops of the essential oils on doorways, windowsills and kitchen sink

    Flies
    Supplies: Handful of cloves + handful eucalyptus + clover blossom
    Instructions: Tie in a sachet and hang from the ceiling

    Blackflies

    Supplies: Cinnamon oil or turmeric oil
    Instructions:  Spray or dab on clothing and exposed skin.
