Chicken Albondigas Soup

This recipe makes about 60 meatballs but you don’t have to use it all at one time, thus the huge range on servings listed above. This is something that you can make and store some in the freezer and pop some in chicken stock for a quick weekday dinner. Traditional sopa de albóndigas is made from uncooked rice, ground beef and chorizo, but my mom used to make it for me with chicken.

Kale Vegetable Soup with Grilled Chicken

One of my favorite leafy veggies is kale! It’s good cooked or raw, sauteed or in a soup! There is room for some purply leafy goodness in this basic vegetable. I had some grilled chicken left from a previous meal so I threw it in the soup but you can definitely enjoy this soup with it as a side.

Tri-Colored Gazpacho

This raw and wonderfully flavorful cold tomato soup is perfect on a hot summer day. Scour your local farmer’s market for tomatoes picked at the peak of ripeness. Garnish with beans and avocado for added texture and flavor.
