Avocado Bean Salsa

Dip crackers or veggies in this dip, use as a hardy snack, flavor your wrap and sandwich or dress your favorite soup.
Ingredients
- 2 Medium Avocados, ripe but not too soft, seeded and diced
- 1 Small Red Onion, diced
- 2 Persian Cucumbers, seeded and diced
- 1/2 Red Bell Pepper, diced
- 1/2 cup Eye of the Goat beans
- 1/4 cup Cilantro, Italian Parsley and/or Basil, chopped
- Juice of 1 lemon or lime
- 1 clove garlic, grated
- Salt and Pepper to Taste
