Warming Ginger Tea

I have been using this ginger tea recipe every winter for the last 10 years and it has never failed. Ginger with its warming and immune boosting properties, combined with sage and thyme, work to keep your body in tip top shape to fight off the bugs of the season. I cook my ginger tea plain, with herbs or with my mom’s recipe, adding cinnamon and jujubes.

Cucumber Avocado Gazpacho

Prep Time: 15 minutes | Serves: 4

I love chilled summer soups that are filling yet refreshing. I happened to have most of the ingredients required to make Healthy Bitch Daily’s awesome recipe of this soup and it was yummy! Stay cool and fed as the temperature starts to creep!

Curried Chicken Salad Sandwich

It was a hit this weekend when I make my usual Chicken Curry Salad with a bit more jazz as a sandwich for my friend’s Bridal Shower Brunch. This recipe will make 12+ sandwiches but will top 6-8 salads. I used an organic multigrain bread, but feel free to use your favorite. Scoop over your favorite greens – I used arugula in the pictures below – for a fresh summer salad!

Orange Dreamsicle

Prep Time: 5 minutes | Serves: 2

Reminiscent of my childhood hot summer days with sticky orange creamsicles on bicycles and of my adolescent trips to the mall with a big styrofoam cup of Orange Julius, this wholesome version of the orange-and-cream pair will trigger your taste buds to walk down memory lane too.

Rawesome Tomato Sauce

Prep Time: 15 minutes | Serves: 4

Growing up, if someone asked what my favorite food was, I probably would have said “spaghetti”. My love of Italian pasta still lingers deep within but I rarely eat pasta. That doesn’t mean that I don’t eat tomato sauce… Not Prego and not Ragu, but I do sometimes buy organic pasta sauce in a jar out of convenience.

Pineapple Smoothie

Prep Time: 3 minutes | Serves: 2

I had a bit of cashew milk leftover last Sunday that I wanted to use up. I poked around my freezer for some frozen fruit and found just enough pineapple pieces. It was the perfect cool-down drink post-hike for us.
